As the old saying goes, “breakfast is the most important meal of the day.”While I would argue that all meals are equally important, breakfast is the meal most commonly skipped. This oatmeal bake incorporates fall flavors and is chalk full of nutrients including fiber, vitamin A, and potassium. Blueberries, one of the most nutrient-dense berries around, provide a nutritional punch with vitamin C, K, and antioxidants. The complex carbohydrates and small amount of fat makes a slice of this bake perfect for a pre-workout snack. If you pair it with a couple of eggs or some Greek yogurt, you’ve got yourself a protein-packed breakfast to aid your body in recovery after your workouts.
Either way, this oatmeal bake is a winner. Prepare this meal at the beginning of the week to have a fast and delicious option waiting for you. Simple to eat – enjoy it cold or warm it up for an extra-special fall breakfast treat.
2 cups uncooked rolled or old fashioned oats
1 1/2 tsp baking powder
1/4 tsp salt
2 tsp cinnamon
1 1/2 cups milk (I use 1%)
2 large eggs
1 cup mashed sweet potato, cooked
1 1/2 tbsp butter, melted
1/3 cup maple syrup, plus more for drizzling
1 tsp vanilla extract
2/3 cup blueberries
Preheat oven to 350 degrees.
Coat the inside of a 2 quart baking dish with butter, oil or non-stick spray.
